Serves 10 servings

Ingredients for the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place the listed items into a pot, heat until it reaches a simmer, stirring until the sugar dissolves. After that, take off the heat allowing it to cool down entirely. Decant into an sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for up to four weeks.

For the Premix: Pour the specified liquid ingredients in a large bottle, leave to sit for 60 minutes, then filter it , ideally through muslin, to ensure it's completely strained.

When ready to serve: Pour 85ml of your batch mix into your cocktail shaker filled with ice, and stir lightly for about 60 seconds to chill. Strain into a frosted cocktail glass or equivalent, garnish with some cranberries and complete it by giving it a light spray of the essential oil over the top.
